Description: 

When Salon does produce, it yields approximately 40,000 to 60,000 bottles per vintage (calculated on a 0.75-liter basis; the proportion of magnums is growing). The wine continues to be largely based on two original selection plots in the center of Le Mesnil-sur-Oger, near the current shared Salon-Delamotte cellar.

Additionally, there are about 20 contract plots totaling approximately 30 acres (approx. 12 hectares), which are exclusively designated for Salon. Most of these are managed by the house itself, and each plot is vinified separately.

However, "exclusively for Salon" must be qualified:
Since its commercial introduction in 1921, Salon has been produced in fewer than 40 vintages (the exact number is disputed). In years when no Salon is declared, the grape material goes into the Delamotte cuvées.
