Description:
Jacques Selosse is a renowned champagne producer who relies on natural winemaking methods and the use of grapes from Grand Cru and Premier Cru vineyards. His philosophy is based on the idea that nature is the main source of beauty and quality in wine and that it is the winemaker's job to enhance this.
What is unique about the production of his wines is that Jacques Selosse often uses the Solera system (perpetuum system) to ensure consistent quality. This involves blending wines from different vintages, with a portion of the older wine always being mixed into the newer wine. This gives the champagne a complexity and depth that clearly distinguishes it from other champagnes.
Vinification : The rosé is made using the assemblage method, which involves blending white wine (usually Chardonnay) with a small proportion of red wine (Pinot Noir). Selosse generally uses Chardonnay grapes from its Grand Cru vineyards in the Côte des Blancs (mainly Avize) and adds Pinot Noir from Aÿ. The wines are fermented in old barriques, which gives the champagne a deeper structure and complexity.
