Ulysse Collin is a highly respected Grower Champagne from Congy in the Côteaux du Petit Morin, characterized by clear, terroir-driven single-vineyard cuvées such as Les Pierrières, Les Roises, Les Enfers, or Les Maillons. Olivier Collin established the Domaine with a focus on low yields, long maturation, and native yeasts to maximize expression and depth. In 2001/02, he interned with the influential Champagne pioneer Selosse, which strongly shaped his approach to manual labor and barrel fermentation.
