Ulysse Collin is a highly respected grower-Champagne producer from Congy in the Côteaux du Petit Morin, characterized by clear, terroir-driven single-vineyard cuvées such as Les Pierrières, Les Roises, Les Enfers, or Les Maillons. Olivier Collin founded the domaine with a focus on low yields, long aging, and indigenous yeasts to maximize expression and depth. He completed an internship with the influential Champagne pioneer Selosse in 2001/02, which greatly shaped his approach to manual labor and barrel fermentation.
