A unique feature of Jacques Selosse's winemaking is that he often uses the solera (perpetual motion) system to ensure consistent quality. This involves blending wines from different vintages, with a portion of the older wine always blended with the newer wine. This gives the Champagne a complexity and depth that clearly distinguishes it from other Champagnes.
Vinification : The rosé is produced using the blending method, which involves blending white wine (usually Chardonnay) with a small amount of red wine (Pinot Noir). Selosse typically uses Chardonnay grapes from its Grand Cru vineyards in the Côte des Blancs (mainly Avize) and adds Pinot Noir from Aÿ. The wines are fermented in old barriques, which gives the Champagne a deeper structure and complexity.
